But how exactly is this magical ingredient made, and what makes it so remarkable? Caramel begins its journey as sugar. The process of caramelization is nothing more than heating sugar until it reaches a beautiful golden color and intense aroma. But it takes skill and patience to get the perfect caramel. Heating it too long will make the caramel bitter, while heating it too short will leave it too light and sweet.

What makes caramel so diverse? It’s a matter of temperature, additional ingredients and how it’s heated. The higher the temperature, the darker and more intense the flavor. Adding butter or cream creates a caramel that is smooth and creamy, ideal for sauces and desserts. Adding a little salt, on the other hand, gives caramel a unique sweet and salty character, which has become extremely popular in recent years. Caramel can be found in many dishes and desserts. Liquid Caramel

This version of caramel will be perfect as a topping for ice cream, cakes or pancakes.

Ingredients:

  • 200 g of sugar,
  • 100 ml of water

Method of preparation:

In a heavy-bottomed saucepan, scatter the sugar and heat over medium heat until it dissolves and turns golden. Add the water, being careful of the hot steam, and stir until the caramel becomes smooth and uniform. Cook for another minute or two, then remove from heat.

Caramel Spread

It is the perfect accompaniment to toast, waffles or fruit. It has a creamy texture and a slightly salty aftertaste.

Ingredients:

  • 200 g of sugar,
  • 100 g of butter,
  • 100 ml of 30% cream

Method of preparation:

Melt the sugar in a saucepan as in the previous recipe. When it gets a golden color, add butter and stir until completely combined. Add the cream, stirring until you get a smooth, creamy consistency. Cook for a few more minutes, then transfer to a jar and store in the refrigerator.

Candy Caramels

For those who love traditional candies, here’s a recipe for caramels that will remind you of childhood flavors.

Ingredients:

  • 250 g of sugar,
  • 50 g butter,
  • 150 ml of 30% cream

Method of preparation:

Melt the sugar in a saucepan until it turns dark golden. Add the butter and stir until it melts. Add the cream and cook for a few minutes until the caramel becomes thick and runny. Pour it onto a baking paper-lined baking pan and let it cool. When it hardens, cut it into pieces.
