Silesian cuisine reflects the history of the region. Thanks to local ingredients and centuries-old traditions, the dishes are rich in flavors and aromas that continue to attract gourmets from all over the world. German, Austrian and Czech influences, as well as Old Polish traditions, have combined here to create a cuisine whose flavor is recognizable at first glance…or perhaps better – at the first bite. Simon, who comes from a Silesian mining family, remembers well how important it was to nurture these traditions and pass them on from generation to generation.

Advantages of Silesian cuisine: What sets it apart?

What distinguishes Silesian cuisine is, first of all, hearty and filling dishes, which were perfectly suited to the mode of hard physical labor in industry and mining. Rolls, Silesian noodles or sour soup are dishes that can satisfy the largest appetite. Then there are the one-pot dishes: cabbage and potatoes in various forms, which are a staple of many meals in Upper Silesia. In a traditional Silesian home, you could always find something to eat – Silesian hospitality is something special! A Silesian home is known for always having a place for guests and a set table full of delicious food.

Simon's personal story

Chef Simon talks a lot about his family, which has had a huge impact on his career. His father was a miner, but cooking was a passion for him, which he passed on to his son. Szymon grew up watching his father prepare traditional Silesian dishes, smoke meats and even pick mushrooms and crayfish. It was this atmosphere of home, full of flavors and smells, that inspired him to choose such a professional path rather than another.

Although Silesian cuisine is deeply rooted in his personal tradition, Szymon is able to present it in a modern way. At Silesian Prohibition, we make sure to preserve the authenticity of the flavors, but at the same time surprise our guests with new interpretations.
