Icing is the icing on the cake (literally!) for many baked goods. Delicate, sweet, with a slightly sour touch of lemon, it is perfect for decorating muffins, cakes or Easter cupcakes.     1. In a small bowl, combine freshly squeezed lemon juice with powdered sugar. Start with 1.5 cups of sugar and gradually add more until you reach the desired consistency. The frosting should be smooth and slightly sticky, but not too runny. <\/span><\/li>
    2. Stir thoroughly until the powdered sugar is completely dissolved and there are no lumps. If the icing is too thin, add a little more powdered sugar. If too thick, add a few drops of lemon juice. <\/span><\/li>
