If a dessert could tell its story, “Spodek” in Silesian Prohibition would have a lot to share. When our pastry chef, Martyna, gave us the story behind the creation of this unique dessert, we knew we were dealing with something truly extraordinary. Martyna revealed to us the details of the entire process, from the idea to the finished product, which today is one of our most popular dishes. The entire work on Spodek took three months and was a real journey full of creativity and perseverance. How was the concept born? How was the dessert that has become our signature dish created? Our patisserie and bar always work together to create cohesive concepts, so when the card went cosmic, we started thinking about creating a dessert that reflected this theme. In Katowice, nothing says “cosmos” as clearly as the Spodek, an iconic building that is a symbol of the city. The head of our pastry shop had long had an idea for a dessert inspired by the Spodek, but there was no suitable opportunity before. Now, with the cosmic cocktail card, the right moment has come. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t

Initially we thought of various forms that could reflect the Spodek. We tried with meringue, other monodesers, but none of them reflected the distinctive shape. They looked like a UFO, but not like a Spodek. Only when we decided on a 1:1 mold did it begin to resemble the real Spodek. However, finding the right mold was a challenge. It was not an easy road. Our team had to order a design of the Spodek, which was printed on a 3D printer, and then use silicone to create a mold for the dessert. This process took several weeks and involved a lot of trial and error. During the process, the entire restaurant team, from the cooks to the waiters, had input into creating the perfect replica of the Spodek. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

The visual side of the dessert was equally important to us. We wanted the Spodek to look like its Katowice original, which meant focusing on details such as the windows and surface texture. The chocolate turned out to be too smooth, so we decided to make the lower part smooth and the upper part rougher. This highlighted the differences in the Spodek’s texture and added authenticity. To give the dessert an extra effect, we used crystal plates to diffuse the light, which created a backlit effect, just like in the real Spodek. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

The first guest to taste the dessert was a gentleman whose father was one of the lighting designers of the Katowice Spodek. His reaction was positive, which reinforced our belief that our work was not in vain. The reactions of guests when they see a Spodek dessert for the first time are priceless. Our waiters proudly present it to the room, and the reactions are full of delight and curiosity. When the dessert is served, everyone pays attention to its unique appearance and wonders what is hidden inside. The dessert has become a real hit not only among our regular guests, but also among business guests, who are eager to order it for their co-workers to show something special from Katowice. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

What’s next for the Spodek dessert? There are plans, but for now it’s a secret. With the change of the card, the flavor of Spodek is also changing, and if there is another inspiration with architecture, it is possible that another new dessert will be created.
